You will find this piece of art to have a sharp but clean natural cheddar flavor with a hint of saltiness and a sweet after taste. If you are lucky you might find some salt-like, calcium lactate crystals on this cheese that will provide your taste buds with a little extra excitement to match it's magnificent flavor.
Age: 2.5 years - 4 years
Body: Low moisture and often crumbly to cut. When cutting it will be very rigid and may fall off in delectable flakes for quick snack. Excellent for a quick taste while drinking your favorite bottle of red wine.
